Chocolate Mega Muffins

  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour
  • ¼ cup Fiber Plan® Daily MixTM
  • ¼ cup granulated sugar
  • ¼ cup packed brown sugar
  • 3 Tbsp. unsweetened cocoa powder
  • 1½ tsp. baking soda
  • ¾ cup fat-free milk
  • ¾ cup unsweetened applesauce
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. molasses
  • 2 tsp. balsamic vinegar
  • 1 tsp. vanilla
  • 1/3 cup small chocolate chips 

Instructions:

  1. 1. Preheat oven to 350*F. Spray forty eight 1 ¾-inch or eighteen 2 ½- inch muffin cups with nonstick cooking spray and set aside.
  2. In a bowl combine flours, Fiber Plan® Daily MixTM, sugars, cocoa powder, soda and a pinch of salt.
  3. In another bowl combine milk, applesauce, oil, molasses, vinegar and vanilla. Add to flour mixture. Stir until moistened. Batter should still be lumpy.
  4. Stir in half of the chocolate chips.
  5. Spoon batter into prepared muffin cups filling to 2/3 full. Sprinkle with remaining chocolate chips.
  6. Bake for 8 to 10 minutes for minis or 15 minutes for regular. Test with toothpick. Cool in pan for 5 minutes. Remove from muffin cups; serve warm, or cool completely and freeze up to 3 months. Reheat to serve. Makes 48 mini muffins or 18 regular muffins.
